It’s (almost!) time!! Wine Bar George will open on Saturday, May 19th in Disney Springs!!
And we have a SNEAK PEEK of the newest spot in Disney Springs, owned by Master Sommelier George Miliotes!
The official opening of Wine Bar George will mark the debut of the only wine bar in the Sunshine State owned by a Master Sommelier.
Master Sommelier George Miliotes was a member of the opening team of the Contemporary Resort’s California Grill, then managed the signature restaurant from 1995 to 2002.
There, he worked with Ron Rupert, who was also a member of the opening team and is now the Executive Chef for Wine Bar George.
Wine Bar George is located next to Raglan Road and across from Jock Lindsey’s Hangar Bar in The Landing of Disney Springs.
The two-story, 200-seat wine bar was built to resemble a winemaker’s home estate, and right upon entry you’ll know that you’re “Welcome!”
Downstairs seating surrounds a well-lit, bright bar, playing in contrast to the darker woods and providing a warm feel.
You can steal a glimpse at bottles representing 135 wine selections, which will be available by the ounce, glass, or bottle.
Heading upstairs…
A second bar is located in the first of two upstairs rooms.
Don’t forget to take a look at “George’s Favorites” listed above the bar.
Before you enter the second upstairs room, you can see the opportunities for outdoor seating on the second floor terrace.
The final room offers seating on charming tables atop barrels.
And (aside from an additional room for private dining), these spots are where guests will enjoy the menu comprised of artisan cheese and charcuterie boards, small plates, and even shareable entrees, all created to pair well with various wines.
While we will be visiting again for a full review once the spot officially opens, here is a sneak peek of some of the items — served in sampling sizes and on party trays during the preview event — starting with a representation of The Big Board featuring artisan cheeses and crafted meats.
This delicious, tender Skirt Steak with chimichurri sauce will ultimately be served as a shareable entree with sides.
It pairs well with Caymus-Suisun.
Crispy Mac and Cheese Bites (every bit as delicious as they sound) are served with tomato nage (FYI, that’s a broth flavored with white wine…I had to look it up) and are Chef Rupert’s take on grilled cheese with tomato soup.
The Hummus (served here on mini naan bread and cucumber) served up a nice kick from a dusting of chipotle powder.
Here is a look at the rich and flavorful housemade Meatballs.
A Jicama Salad brings together finely sliced and pickled jicama, fuji apples, jalapeno, and black cumin seeds for a refreshing and unique spicy-meets-sweet dish.
Kila Cava, a Spanish sparkling wine, was paired with this dish.
Again, Wine Bar George will officially open on Saturday, May 19th, at 5:00 pm. Then, on May 20th, the spot will begin operating on its regularly scheduled hours: 11:00 am to 2:00 am daily.
Walk-ins will be welcome (but Advance Dining Reservations will be open for booking on May 25 for dates starting June 25, 2018). And The Basket at Wine Bar George will provide a Counter Service takeaway component.
