Oh, Gideon’s, you’ve done it again. 🌈
Once we think that we’ve found our new favorite item at the bakery, Gideon’s Bakehouse rolls out something else that makes us do a hard pivot towards the next best thing on the menu. Our freezers can barely handle the amount of Triple Chocolate Coffee Cake and Peanut Butter Espresso Cookies, Hand Pies, Cake Dips, and more that we’ve got stacked up. Buuuut, we’d be happy to try and find some room if it means we get to take home TWO more themed sweets from Gideon’s!
Pride Month has arrived in Disney World, meaning you can find rainbow items sprinkled around the parks. Of course, Gideon’s Bakehouse isn’t being left out of the festivities as a limited edition cookie and cake slice are now sitting pretty at the bakery!
You might remember the Santa’s White Christmas Cookie from way back when around the holiday season. The original was packed with notes of coconut, sweet caramel, and vanilla with freshly ground White Christmas coffee beans and macadamia nuts throughout it. But, Gideon’s is repurposing the fan-favorite cookies into a Pride-themed sweet with edible RAINBOW glitter instead!
But, when we actually got the cookie, it basically looked exactly the same as the one we got during Christmas time. We couldn’t spot much of the rainbow glitter…
…BUT the Pride version of the White Chocolate Macadamia Nut Cookie was just as delicious as we remember. It’s no surprise it’s become such a fan-favorite because the salted caramel is actually some of the best we’ve ever had. Gideon’s wasn’t afraid to add a salty component to the caramel flavors, whereas some places only sprinkle a hint into the mixture.
As you can probably tell, there’s a TON of white chocolate packed into this cookie, balancing the salty with the sweet. Even if you aren’t a fan of sweet and salty combinations or the list of ingredients, we still think that it’s worth giving this cookie a try for $6! It’s so good that you might surprise yourself with a new appreciation for white chocolate, caramel, and macadamia nuts.
But, be warned that the edible glitter will get ALL over your hands. ✨ Gideon’s Bakehouse doesn’t have napkins or wipes, so you’ll want to plan ahead and bring some with you before heading to Disney Springs!

But, if you’re looking for something EXTRA colorful for Pride Month, you can satisfy all your cravings with the new Rainbow Crunch Cake. (Swoon, right??)
The 3-layer vanilla confetti cake is fully decked out in a spectrum of rainbow colors with marshmallow buttercream and cake crumbs on top for that additional bit of awesome.
While it’s absolutely gorgeous, the Rainbow Crunch Cake is perfect for fans of light, fluffy flavors! While a few of the cake options at Gideon’s tend to be more rich and dense, the cake on this treat is super soft with a lean towards airy flavors. The sweet crumbs add a well-needed bit of crunch to the treat, which we can’t resist for only $10!
Even if you’re not a fan of marshmallow icing, we still think that you can enjoy the cake and crumbs on the Rainbow Crunch Cake!

Limited edition items have a limit of two per paying guest as they WILL likely sell out during the day. So, you might want to head to Disney Springs first thing in the morning to snag these treats. Plus, Gideon’s Bakehouse should be receiving Pride Month merchandise soon as well. So, we’ll be on the lookout for even more surprises in store at the cookie shop soon! The White chocolate macadamia caramel cookie was the November cookie last year – It was delicious! It was different from the December Santa cookie. It was my favorite one I got in November.
There’s no way I would want rainbow cake. Although rainbows are one of the most beautiful things that you can see in God’s nature, I just couldn’t eat all of that food dye. It looks pretty to look at, but not eat.
