The bakery is introducing a brand new cookie flavor with a dark twist — it’s only available at night! Why doesn’t it come out during the day, you might ask? Gideon’s told us the story behind the new nocturnal cookie.
Gideon’s newest cookie flavor is the Dark Coffee Cake Cookie, which is their classic Coffee Cake Cookie with a Chocolate Cookie base instead of the previous Vanilla.

Can you say YUM?? The half-pound cookies at Gideon’s don’t tend to disappoint, and this one sounds like another winner to us!
This Cookie Only Comes Out at Night
But just wait until you hear the story behind these magnificent creations. According to Gideon’s Bakehouse, the mysterious boy Pipistrello was found in the alps of Northern Italy as an orphan, given up because of his strange looks. He was adopted by an eccentric, wealthy man who taught Pipistrello to study philosophy, music, and alchemy. Now, Signore Pipistrello (“Gentleman Bat” in Italian) wanders around looking for more books to continue his studies, and he’s even made it to the extensive library in Gideon’s Bakehouse in Disney Springs.

He loved the treats at the Bakehouse, but since he could only come out at night, he could never try the Coffee Cake Cookie, which is only available in the morning! Especially for Signore Pipistrello, Gideon’s created the Dark Coffee Cake Cookie so he could enjoy the flavors as well. Gideon’s is also coming out with a new line of merchandise featuring Pipistrello himself!

They will have t-shirts, stickers, and art prints available with Pipistrello in all his academic, gentlemanly glory. You can get the merchandise at the Gideon’s Bakehouse location in Disney Springs.

The Dark Coffee Cake Cookie is available from sunset to sell-out, so head in at nightfall to try the newest flavor! Gideon’s is going by the sunset time on your smartphone, so just check the weather app to see when the cookies will start selling.
