Roundup Rodeo BBQ will be opening soon in Disney’s Hollywood Studios and we’ve got even MORE details to share!
The restaurant is set to open on March 23rd, reservations are open now, the full menu has been shared, and we’ve got all kinds of sneak peeks inside. But now Disney has shared a video with even more reveals!
In a video shared via Instagram, we got to hear a bit from Disney’s Culinary Director for Concept Development, Brian Piasecki, on how some of this restaurant came together. According to Piasecki, the process of putting the menu together here all began with a story (as most things do in Disney).
According to the story, Andy is putting together this special playset — a rodeo arena — and everything appears to have been really put together by Andy, with things cut or taped together using pencils, sticks, and cardboard. Piasecki shared that they wanted to infuse as much of that spirit into their food as possible.
In terms of the decor, in Disney’s video, you can see a section of the room featuring a booth to buy “tickets” and a cutout of Woody riding Bullseye.
In one area, it looks like we’ll see Ropin’ Woody taking care of the evil emperor Zurg…
…while another part of the restaurant has cutouts of Woody, Bullseye, and Jessie.
And it seems like you might want to look for hidden Mickeys here too — is that one on our little cow friend?! It might be!
Looks like one wall has a fuller picture of the Roundup Rodeo playset Andy has built here and what it features.
In terms of the food, the meals here will be served family-style. They include starters, house-smoked meats, plant-based items, a variety of sides, and desserts. Piasecki described it as being a restaurant with food for everyone. The brisket here is house-smoked for 36 hours!
There’s actually a dedicated smokehouse for the restaurant and according to Piasecki, it’s MASSIVE! He shared that he’s hoping this will enhance the guest experience because you’ll actually smell the meat being smoked as you walk through the park. He also noted that things are being put together from scratch in the smokehouse — we can’t wait to give it a try!
Want some Slinky Doooooooooog Mac & Cheese? You can get that as one of your sides! It’s made with spiral pasta in a creamy house-made cheese sauce topped with crumbled cheddar crackers. According to Piasecki, the pasta is meant to “spring” when you pick it up, sort of like how Slinky Dog moves!
There are also plant-based items on the menu like cauliflower topped with a harissa drizzle, and a rib chop that features “highly seasoned” Impossible meat that has been glazed with bbq sauce and skewered on sugar cubes.
And you can’t forget about dessert! Piasecki shared that they wanted to pull inspiration from the idea of a backyard cookout where various guests would each bring an item. What’s something people sometimes bring to a cookout? Pie! So they took that idea and shrunk it down. Many of the desserts here are mini pies in a jar!
But you’ll also find a cupcake and more sweets.
Overall, Piasecki shared that he hopes guests have a fantastic dining experience, but also let themselves be a kid again, have fun, and enjoy a sense of nostalgia. Check out the full video below!
