If you think heading to Disney Springs just for a cookie is wild, you have probably never been to Gideon’s Bakehouse before.
From massive gooey cookies and decadent slices of cake to edible cups of FROSTING — we have a hard time resisting the treats at this spot. This weekend, Gideon’s released some limited-time flavors, so of course we had to make our way over to Disney Springs to see for ourselves.
This weekend only, Gideon’s Bakehouse has TWO new desserts — the Cream Cheese Stuffed Sugar Cookie and the Easter Carrot Cake, so we stopped by to take a look.

We decided to try the new Sugar Cookie for $6. This is made with vanilla cookie dough, stuffed with cream cheese frosting, and coated in sugar crystals.
This cookie was pretty simple — a basic vanilla cookie with sugar crystals, but it was done really well! The cookie itself was soft and light, and the sprinkles on top added a nice crunchy texture.

And inside, the cream cheese frosting was delicious! It was light and fluffy and we loved the creamy texture it added to the cookie.
This cookie was delicious, but it BROKE three major some cookie rules!
- The dough for this cookie is “uninterrupted” meaning it’s just the regular base dough that Gideon’s uses for many of its cookies. Usually, there are chocolate chips in there so this is the first time that you can try it “naked”.
- The cookie is stuffed with cream cheese. Florida is hot and usually Gideon’s doesn’t like to make cookies that can be less than perfect if they don’t get eaten right away. The Instagram post announcement for these treats notes that the cream cheese icing inside likes to stay room temperature and people are encouraged to eat the cookie right away.
- This is a fairly simple cookie, and if you know Gideon’s, you know that simple is not their style.
Nevertheless, we really enjoyed this cookie!
Overall, this cookie is not very sweet, which we thought was perfect for a hot Florida day. But, if you’ve got a major sweet tooth, you might want to grab something else — and trust us, there are plenty of good options to choose from here. If you’re interested in the Easter Carrot Cake, it’s also only available this weekend, so make sure to stop by soon!
