Saddle up, because we’ve got a rootin’ tootin’ recipe from one of Walt Disney World’s most popular restaurants so you can replicate a delicious dish right at home.
From pretty much the day it opened in March of 2023, Toy Story Land’s Roundup Rodeo BBQ has been one of the most in-demand restaurants at Walt Disney World. We’ve tried everything at the heavily-themed Toy Story eatery, and while there’s plenty of yummy options, there’s one delicious dish we can’t get out of our heads.
The Prospector’s Homemade Cheddar Biscuits with Sweet Pepper Jelly, which is described by Disney as “flaky” and “flavorful” with “just the right amount of cheese”, have become a fan favorite dish and a must-get for many Disney food connoisseurs. However, if you’re craving these cheddar biscuits and don’t have a Hollywood Studios trip planned anytime soon, we’ve got you covered with the recipe.
What You’ll Need
For the Cheddar Biscuits:
- 1 cup of frozen unsalted butter
- 1 1/2 cups of bread flour
- 1 1/2 cups of cake flour
- 3 tablespoons of sugar
- 2 tablespoons of baking powder
- 1 teaspoon of coarse salt
- 1 teaspoon of baking soda
- 1 1/3 cups of buttermilk
- 2 cups of shredded yellow cheddar cheese
- 1/2 cup of warmed clarified butter
For the Sweet Pepper Jelly:
- 3 large, diced red bell peppers
- 1/2 cup of diced Spanish onion
- 1 teaspoon of red pepper flakes
- 1/2 cup of white vinegar
- 1 cup of divided sugar
- 1/2 teaspoon of coarse salt
- 2 teaspoons of pectin
Directions
For the Cheddar Biscuits:
- Preheat oven to 375°F.
- Line baking sheet with parchment and set aside.
- Grate frozen butter using a food processor with shredding disk or cheese grater.
- Whisk and bread flour, cake flour, sugar, baking powder, salt, and baking soda in large mixing bowl. Add frozen shredded butter and whisk until butter is evenly distributed.
- Add buttermilk and shredded cheese to the mix and stir with spoon until soft dough forms.
- Transfer dough to a floured surface and roll into 1/2-inch thick rectangle. Fold dough into thirds and roll to flatten slightly. Repeat 3 times. Roll dough to 1/2-inch thickness.
- Cut into circles using a 3-inch round biscuit cutter, and place on prepared baking pan.
- Bake for 14-15 minutes, until tops are golden and the bottom of the biscuits begin to brown. Remove from oven when complete.
- Allow biscuits to cool, and then brush with warm butter and sprinkle desired amount of sea salt on top.
For the Sweet Pepper Jelly:
- Purée red bell pepper and onion in food processor until smooth.
- Mix puréed pepper mix, red pepper flakes, vinegar, 3/4 cup sugar, and salt in a medium saucepan and bring to a boil.
- Reduce heat to simmer and stir occasionally with rubber spatula, for 10-15 minutes, until reduced by slightly less than 1/3.
- Combine pectin and remaining 1/4 cup sugar in small bowl and add to simmering pepper mix.
- Stir constantly for 5 minutes or until jelly thickens.
- Pour into heatproof bowl to cool for 30 minutes.
- Cover, and refrigerate until ready to use.The Pepper jelly can made ahead and refrigerated for up to 7 days.
Once you’re all done, sit back – maybe throw one of the Toy Story films on Disney+ – and enjoy a delicious, and park-accurate meal of Cheddar Biscuits with Sweet Pepper Jelly.

Where have all the candy and caramel festive fun apples gone??? There were none to be found in any park and only a few plain ones at Goofys Candy Company???
