We’re back at Wine Bar George in Disney Springs!
Wine Bar George by Master Sommelier George Miliotes opened its doors last May and has been gaining dedicated fans ever since. Wine Bar George has a reputation for offering an upscale yet welcoming and comfortable experience to all guests from the educated wine lover to the novice just looking to learn about which wines they might enjoy.
But it’s not just wine that’s brought people through the doors. With Chef Ron Rupert at the helm of the kitchen, the food has been remarkable from the get-go, too, serving everything from decadent cheese boards to Crispy Mac and Cheese Bites to Steak Frites and more.
And our visit today, in fact, is to check out an entirely new menu. Because Wine Bar George is now serving BRUNCH!
On Saturdays and Sundays from 11:00 AM – 3:00 PM, the new Wine Country Brunch is taking place.
Atmosphere
Because we’re focusing on the new Brunch, our tour will be brief. (You can take a full photo tour of Wine Bar George here).
But we did want to show you another glimpse of the two-story, 200-seat restaurant which — in keeping with the welcoming vibe — manages to be both modern and cozy at the same time.
Created to evoke the feel of a winemaker’s home estate, the variety of seating options include table-topped barrels surrounded by stools, traditional tables and chairs, and outdoor terrace seating to enjoy the weather and the views.
And the terrace is exactly where we sat down to try the new brunch menu!

Eats
The new Wine Country Brunch features an a la carte menu of Starters, Boards, Main Plates, Sweets, and Sides.
Oh, and of course, drinks! Note that you can order off the full drink menu during brunch, but this menu pictured below puts the focus on brunch specialties.
In fact, why don’t we start there?
Having previously enjoyed the new Dole Whip Froscato which recently made its debut at The Basket at Wine Bar George (the restaurant’s counter service option), we couldn’t resist trying the Dole Whip Mimosa — moscato, pineapple, and prosecco — for brunch.
The Dole Whip Mimosa has a slushy consistency and tastes exactly as it should: like a Dole Whip with bubbles! This is a sweeter drink than the Dole Whip Froscato, since the focus is on the Prosecco (the Froscato includes vodka).
The Freaujolais came by recommendation of our server.
Reminiscent of a frozen sangria, this frozen blend of Beaujolais, vodka, and raspberry is a light and sweet cocktail (though less sweet than the Dole Whip Mimosa) that’s perfect for brunch.
Starters include Spiced Olives, Hummus, and Kendall Brook Smoked Salmon among the offerings. We tried the Kendall Brook Smoked Salmon, which is exclusive to the Brunch menu.
Presented on ciabatta crisps, the salmon is also topped with crème fraiche and fried capers.
This dish carries a really nice smokiness, and the crème fraiche is fabulous. If you are a fan of salmon, this is a great pick.
And, as always, we highly recommend the Crispy Mac & Cheese Bites! If you’ve never tried them, you can rest assured that Brunch still gives you the opportunity!
Boards include the Artisanal Cheese Board, the Charcuterie Board, and The Big Board with the Chef’s selection of six cheeses and five meats. (Note that the picture below of the Artisanal Cheese Board is from a previous visit to Wine Bar George.)
Main Plates put the focus on the “breakfast” part of Brunch, with French Toast, Eggs Benedict, and Sausage Gravy & Biscuits. You’ll even find a brunch twist on the terrific Steak Frites with the Steak & Egg Frites!
This generous plate of crispy fries is topped with skirt steak, eggs, and a sriracha hollandaise.
The steak strips were cooked perfectly at medium, and the eggs were nice and runny. The sriracha hollandaise, though, was the really unexpected surprise. It adds a great kick without being too spicy and makes an already solid dish even more memorable.
But if a sweet dish is more of your brunching style, the French Toast might be right up your alley.
The soft brioche is practically oozing with mascarpone tucked between the bread, with the caramel adding more sweetness. The berries are super fresh, and we would’ve loved to have had more of them since they add a touch of lightness to a very rich, tasty dish.
We also decided to try a dish that also came highly recommended by our server: the Burrata.
Candied bacon and avocado are the highlighted toppings, in addition to the burrata cheese, atop the ciabatta. It’s all drizzled with olive oil.
Okay, can we talk about the fact that there’s, like, an entire avocado on the bread? And that bread — it’s toasted — but not too hard — and holds up well to this mountain of toppings. Which, again, include… CANDIED BACON.
And the burrata cheese is just so good, a bit lighter and smoother than mozzarella. While we don’t know if this would be most people’s typical brunch order, it’s terrific. In fact, George Miliotes was present (as he quite often is at Wine Bar George, so you may run into him yourself!) and said that he thinks the Burrata will be the sleeper hit on the brunch menu.
But wait, there’s more! Sweets include everything from Cinnamon Buns to Olive Oil Cake, while savory Sides offer more traditional breakfast offerings like bacon and house-made buttermilk biscuits. We chose the specialty Rosé Cookie.
In essence, it’s a nice, soft sugar cookie topped with buttercream frosting flavored with rosé, which you really can taste in the generous amount of frosting. It’s so rich and it’s a LOT following the large brunch dishes, but it’s well worth ordering, so remember that you can always share with your brunching pals!
Overall
The Wine Country Brunch offers everything we’ve come to expect from Wine Bar George: great portions of memorable food made with fresh, quality ingredients in a lovely setting. And to top it all off, the Wine Country Brunch gives you a chance to try some especially fun drinks (or explore one or two of the over 130 wines in the house). If you are a brunch fan — or just a fan of great food in general — you’ll definitely want to consider the new Wine Country Brunch at Wine Bar George.

This looks amazing! I’m wondering how to use the dining plan there as the menu seemed to be lots of small plates… did I misunderstand?

Tracey, from what I understand, lunch at WBG includes a lunch special OR two small plates and a glass of wine (limited by price). Dinner can include two small plates and wine or a family-style entree (if two people want to pool their credits). Of course, this is subject to change! It’s worth a call to Disney to see if they can confirm the current configuration.
