Disney Princess Half Marathon weekend is quickly approaching!
While the event is virtual this year, if you’re a participant you’re probably still working hard to prepare (and dreaming of those medals)! Luckily, we’ve got a princess-inspired recipe for a quick and healthy snack break.
Recently runDisney shared a recipe for Moana’s Wayfinder Bread. This is a fruity, tropical blend of sweet but satisfying ingredients, and it’ll give you the energy you need to get out there and run. Let’s get baking!
Ingredients
- 2 cups white whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ teaspoon salt
- 3 GoGo Big SqueeZ Pouches in Peppy Pineapple
- 1 egg
- 1½ teaspoon vanilla extract
- ¼ cup unsweetened coconut milk
- 2 tbsp canola oil
- ½ cup honey
- ½ cup finely chopped pineapple, fresh or thawed from frozen
- 3 Tbsp shredded coconut
Directions
Step 1: Preheat oven 375 F and grease a 9×5 loaf pan with non-stick cooking spray (or line with parchment paper).
Step 2: Whisk together dry ingredients in a large bowl.
Step 3: Add in remaining wet ingredients and stir to combine — but be careful not to overmix.
Step 4: Pour batter into pan and sprinkle with shredded coconut.
Step 5: Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
Step 6: Allow bread to cool in pan for at least 10 minutes before removing. Then allow to finish cooling on a wire rack before serving. Refrigerate leftovers. Serve with eggs and fruit as part of a complete breakfast, or with 2 Tbsp of nut butter as a snack! Store in an air-tight container for 3-5 days in the refrigerator.
