Preheat oven to 300 degrees.
Pie Crust Dough:
3 ½ cups all purpose flour
2 tablespoons sugar
1 teaspoon salt
2 sticks unsalted butter cut into ¼ inch pieces
4 tablespoons Crisco – Vegetable
Shortening Sift the flour, sugar, and salt into a large bowl Using your fingers, work in the butter and shortening until the mixture resembles coarse crumbs. Add 2 tablespoons ice water and work with your fingers until the water is incorporated and the dough comes together. Add more water if needed.
Spray the inside of a 9x13x2 inch glass or ceramic baking dish with a
non-stick coating. Roll out pie dough on a lightly floured surface and line the baking dish with dough (as for an apple pie)
Apple Filling:
4 pounds Baking Apples – Golden Delicious
½ cup Sugar
1 ½ cups Brown sugar
½ teaspoon Nutmeg – ground
½ cup Flour
Sift dry ingredients together. Put apples in a small saucepan and cook
over medium heat for 2-3 minutes. Add dry ingredients and cook until
apples are soft and ingredients are thoroughly mixed. Remove apples
from heat and chill thoroughly. Place cooled apple filling into dish.
Cream Cheese Filling:
8 ounces Cream cheese – softened at room temperature
1 each large egg
2/3 cup sugar
1 teaspoon Vanilla Extract
Combine all ingredients in a mixing bowl and mix until smooth. Top apples with cream cheese mixture and swirl into apples slightly.
Oatmeal Streusel:
¾ cup All –purpose flour
½ teaspoon Cinnamon – ground
½ cup Brown Sugar – packed
¾ cup Rolled Oats
½ cup Butter – Unsalted
Spread streusel mixture evenly over top of apple/cream cheese mixture.
Bake in center of oven for 1 hour and 15 minutes. Serve with vanilla ice cream.

Potato Salad

Ingredients
3 pounds of red skin potatoes, diced
¼ cup small diced red peppers
¼ cup small diced celery
¼ cup small diced yellow onion
1 tablespoon dried parsley flakes
To taste salt
To taste pepper
1 cup white balsamic dressing
Ingredients for white balsamic dressing
¼ cup white balsamic vinegar
2 tablespoons chopped garlic
2 tablespoons honey
¾ cup of olive oil
Method of preparation for potato salad
1. In a large pot, add potatoes, and then add enough water to cover
the potatoes. Add a pinch of salt. Boil until potatoes are fork tender
about 18 – 20 minutes.
2. When the potatoes are cool. Dice the potatoes and small dice the
rest of the vegetables.
3. Put all potatoes and vegetables in a large bowl. Season with
parsley, salt and pepper. Add dressing and toss all together.
Refrigerate at least one hour.
Method of preparation for white balsamic dressing
1. In a small bowl, add white balsamic vinegar, garlic and honey.
Using a whisk, blend well.
2. Slowly add the olive oil until well blended.

French Toast Bread Pudding served with a warm Pecan Praline Sauce

French Toast Bread Pudding
4 loaves Raisin Bread
2 loaves Kaiser Rolls
1qt Egg Yolks
2TBSP Cinnamon
1 TBSP Salt
1 cup Sugar
2 cup Syrup
1 gallon Heavy Cream
Method:
Cut bread into 1×1 cubes and place into a Lexan.
Mix egg yolks, cinnamon, salt, sugar, syrup and heavy cream together in
a cambro.
Pour egg mixture into the bread and mix thoroughly.
Place Mixture into container and sprinkle granulated sugar on top with 4
butter pats.
Place in a 350 degree oven for 25 minutes.
Caramel, Banana and Nut Topping
3 Bananas- sliced
1 cup Pecans Chopped
2 batches Caramel (recipe below)
Procedure:
Have sliced bananas and place them in warm caramel sauce.
Add pecans to the caramel sauce.
Caramel
Ingredients
1 packed cup brown sugar
1/2 cup half-and-half
4 tablespoons butter
Pinch salt
1 tablespoon vanilla extract
Directions
Mix the brown sugar, half-and-half, butter and salt in a saucepan over
medium-low heat. Cook while whisking gently for 5 to 7 minutes, until it
gets thicker. Add the vanilla and cook another minute to thicken
further. Turn off the heat, cool slightly and pour the sauce into a jar.
Refrigerate until cold.

Key Lime Mustard Sauce
1/4 cup Honey
1 cup Honey Dijon Dressing
3/8 cup Key Lime Juice
1 tablespoon White Vinegar
1/2 cup Mayonnaise
3/8 cup Stone Ground Mustard
Mix all ingredients together in large bowl until incorporated.

Ingredients
6 Cups Graham Cracker Crumbs
2 Tbsp Baking Powder
3/4 tsp Salt
1 1/2 Lbs Butter, room temperature
3 Cups Sugar
1 Tbsp Vanilla Extract
3 Cups Milk
6 Oz Egg Yolks
6 Oz Egg Whites
Hershey Chocolates
Method
1. Combine the Graham Crackers, Baking Powder, and Salt. Blend well. Set aside.
2. Beat the Egg Whites to a soft peak. Set aside.
3. Beat the Butter, Sugar, Vanilla Extract, and Egg Yolks until light and fluffy.
4. Add the dry ingredients and milk, alternating additions.
5. Fold in the Egg Whites.
6. Place a Hershey Chocolate in each one before baking.
7. Bake in a preheated oven at 350°F for about 30 minutes.
