Chocolate lovers, take note: on Tuesday, December 15th, Disney World’s very own specialty chocolate shop — The Ganachery — will open its doors in The Landing of Disney Springs!
Hand-crafted chocolate indulgences will be the headliner, all day, everyday.
According to Disney, “This isn’t about sugar and sweets, but pure and simple chocolate. The star of the show is a custom-made ganache, a luxurious, proprietary mixture of melted chocolate and cream.”
While the shop will offer both milk and dark chocolate indulgences, the dark products in particular will feature a 65 percent dark chocolate with a hint of vanilla.
It seems we can look forward to a true experience in addition to flavor, as guests can enjoy watching a chocolate expert mix and decorate each piece. An in-house chocolatier will greet guests upon entry, and a chocolatier will encourage visitors to try one of the sixteen different ganaches created in-house.
Disney Pastry Chef Stefan Riemer shared a few of the various flavors guests might find: dark chocolate with a touch of shaved Egyptian salt, milk chocolate with a dash of dark chocolate and hint of Sri Lankan cinnamon, and the signature dark chocolate with a hint of Florida orange. Flavors will fall into one of four categories: Spices (like chipotle), Classic (such as vanilla and caramel), Trendy (matcha yuzu chocolate) and Fruit (passion fruit and calamansi among them). “Textures, tastes, colors – this is about relaxing and enjoying a bite-size indulgence,” says Chef Stefan.
Nine custom-made chocolate bars (which will not be created in-house) will give nods to Disney destinations like Aulani (white chocolate with pineapple and coconut), Disneyland Paris (dark chocolate with liquid caramel and fleur de sel), and Disneyland Resort (milk chocolate with raisins and almonds). And our favorite Disney characters, the Fab Five, won’t be left out of the chocolate bar mix. Minnie’s Bar, in particular, will be made with milk chocolate and dried strawberries.
Unique to the holiday season — when The Ganachery will first open — will be a marzipan-covered mini-Stollen Bread, further covered in a dark chocolate blend.
The space will resemble an apothecary, because Chef Stefan also shared that, “a chocolatier is similar to a scientist.” Look for a copper saucepan chandelier, giving a nod to the famous tool.
So it sounds like there will be plenty to feast our eyes on with this new addition, but we’re mostly looking forward to feasting on lots and lots and LOTS of CHOCOLATE. How about you 🙂 ?
Will you be making a special trip to The Ganachery? Please let us know with a comment!

This seems to be directly competing with Ghirardelli’s. I’m surprised.

Will there be any gluten free options there?

This is right up my street! I’ll be following your coverage of this one closely, and I look forward to being able to visit this on my next trip, though it likely won’t be until 2018 at the earliest! I can drool over the pictures I suppose…

Will these chocolates be made by a pastry chef, a chocolatier, or candy maker? And what brand name of chocolate will be used? Will there be bittersweet as well as milk chocolate and semi sweet? How about white chocolate?
Brooke says
Ariel — There will be selections in milk chocolate and white chocolate as well as various dark chocolates. Also look for seasonal options when they open. We will have both a first look and a full review of The Ganachery very soon. Stay tuned!
